Place whole or half ham fat side up on rack in open roasting pan. Do not cover and do not add water. Bake in slow oven (300 F), allowing 15-20 minutes per pound for a large ham; 20-25 minutes per pound for a small ham; and 25-30 minutes per pound for a half ham.

Thermometer should measure 170 degrees when done. Ham may be basted during cooking with honey, syrup from canned fruit, or cider. Or, the last 30 minutes of baking, score fat in diamond shapes; stick a whole clove in each diamond and rub surface with dry mustard and brown sugar moistened with ham drippings.

Baked Ham with Pineapple and Sweet Potatoes

  • 2 slices ham, 1 inch thick
  • prepared mustard
  • 6 slices canned pineapple, plus some reserved syrup
  • 3 cooked sweet potatoes, peeled and cut in half
  • 1/4 c. brown sugar

Cut each ham slice into 3 pieces. Spread with mustard and place in greased baking dish. Top each piece of ham with a pineapple slice, then half a sweet potato. Pour some pineapple syrup over, then sprinkle with brown sugar. Bake uncovered for one hour at 325 F.

Serves 6.

Cheese Toast is very simple to prepare, and if you let your imagination go, and you get creative, you can produce some delicious snacks and appetizers, based on this simple dish.

For a quick and easy snack …

  • toast one or two slices of any kind of bread
  • slice enough Cheddar to cover the toast
  • and toast under the grill till the cheese is melted and slightly browned.

Some simple options are …

  • Use other cheeses, either by themselves or in combination with cheddar
  • Spread some ketchup, chutney, pesto, salsa or pepper jelly on the toast before adding the cheese
  • Add a slice or two of tomato
  • If you are not a vegetarian add some cooked and chopped bacon as well

To serve as appetizers or hors d’oeuvres do one slice per person and cut each slice into three fingers.

Whether you are vegetarian or not, in addition to the above, there are so many more ways to get creative with this basic recipe …

  • Toast any kind of roll sliced in half, or muffin, or crumpet instead of bread
  • Spread a layer of chutney, sweet pickles, pesto, salsa or paepper jelly on the toasted roll
  • Add a layer of asparagus, mushroom, sliced tomatoes, or sliced onions (cooked or raw)
  • If you are not a vegetarian add a layer of fried bacon, ham, chicken, left over cooked mince or other meats, shrimps, smoked salmon, tuna, anchovies
  • Cover with grated or sliced cheese(s) of your choice
  • Grill till cheese is melted and browned on top

Two versions of this, a “Ham and Asparagus Melt” and a “Tuna and Asparagus Melt”, were extremely popular with golfers wanting a snack in my restaurant days.

Extra TIP: If you don’t have quite enough meat, use more veggies, or add new ingredients to the mix, like black beans or fresh corn.

Cover the bottom and sides of a 9 inch spring form pan with the crust mixture and bake at 450 degrees for 10 minutes. Allow to cool.


  • 2 (8 ounce) packages of cream cheese, softened
  • 2/3 cup sugar
  • 3 eggs
  • 2 tablespoons flour
  • 1/2 cup sour cream
  • 1 apple, peeled and chopped
  • 1/2 cup caramel sundae sauce
  • 1/4 cupped chopped pecans
  • 1 teaspoon cinnamon

Decrease the oven temperature to 350 degrees. With and electric mixer on medium speed, combine the cream cheese, flour and the 1/3 cup sugar until well blended.

Add the eggs one at a time and mix well after each addition. Blend in the sour cream. Toss the apple pieces in the remaining sugar and cinnamon and then stir into the cream cheese mixture. Pour the mixture over the crust and bake for one hour at 350 degrees.

Run a sharp knife around the edges to loosen the cake but don’t remove the rim until cool.

After the cake is chilled, top with caramel sauce and pecans.

Great Turkey Recipe: Begin With Smoked Turkey

If you’re like most people you really don’t care for turkey even with good turkey-recipes. To most people turkey is so once a year affair on Thanksgiving to have roast turkey. Occasionally if you’re on a health kick you will take to work roast turkey breast.

Brine the turkey

Prior to cooking the turkey-the day before, you will need to brine the turkey for 12-24 hours.

Now take the other 1/3 of the coals and get them heated up using your chimney. You then cover the wood chips with these hot coals.

You want to keep the temperature of your smoker around 230 but not over 250 . You will learn to do this the more you use your water-smoker. Make sure the vents below the smoker are open halfway prior to placing the hot coals in the smoker.Also open the top vents a little in the lid to let the smoke out.

Place warm water in the water pan above the coals.Put the racks into the the smoker.

You will take a large aluminum pan to sit on the bottom rack to catch the drippings from the turkey that you will later use as gravy. You can then place the brined turkey in the upper rack.
Close the top and your smoked-turkey is on the way. Figure it’s going to take 20 minutes per pound go turkey to cook the bird and add 15 minutes for every time you open the lid. You got to resist opening that lid!

Check the internal temperature of the turkey every few hours when it hits 170 degrees f in several places then its done.
